Easy Microwave Lemon Curd

If you love lemon curd then you need to make this Easy Microwave Lemon Curd. It will probably be the easiest lemon curd you ever make. I know you are probably thinking, why would I want to make a microwave lemon curd? How can it be any good and isn’t it so much easier to just buy it? Well my friends, this blows jarred lemon curd out of the water. Once you have this I don’t think you will go back to that jarred stuff.

I first discovered this Microwave Lemon Curd from My Baking Addiction. I had way too many lemons and didn’t know what to do with them. Most recipes that have lemon only use one or two at most. I needed something that was going to use way more than that! Sometimes I can be a little lazy when it comes to cooking, that’s why I wanted a simple lemon curd recipe that I wouldn’t need to cook on the stove.

I know, I have had lots of recipes on here that include lemon. Have you seen my Lemon Blueberry Muffins with Crumb Topping, Strawberry Lemon Freezer Jam, Mixed Berry Lemon Pie Bars, or Easy Blueberry Lemon Galette? I just can’t help it, I seem to find some ingredient I like and want to include it in everything. Does that ever happen to you, or is it just me?

Regardless, I don’t think you will regret at least giving this a try. It’s tart and not too sweet. I think the problem I have with jarred lemon curd is that it is usually pretty sweet and doesn’t have enough lemon flavor. Plus, this recipe uses simple ingredients that you probably already have on hand.

Uses for lemon curd

You may be wondering what you would do with all this yummy lemon. It would be delicious on some scones or my Purple Sweet Potato Biscuits, You can use it as a filling for a cake or mix it into some buttercream. I suggest my cream cheese buttercream.

9. Pour lemon curd into sieve
10. Use a spatula to help push the lemon curd through the sieve

12. Pour or spoon into sterilized jars

Either way add an additional tablespoon or two of fresh lemon juice to the buttercream. This will help cut some of the sweetness and you will have a super lemony buttercream. I have been experimenting with macrons, and this lemon curd buttercream is my top filling so far!

You can also slather it on some bread or toast. I had a slice of freshly baked bread, butter, freezer jam, and a spoonful of lemon curd. Amazing!

This would also be perfect as a tart filling, in a crepe, on some pancakes or waffles. Even if you want to eat it by the spoonful, I wouldn’t judge. It’s tart, lemony, and just so good.

Easy Microwave Lemon Curd

Easy Microwave Lemon Curd will be the easiest lemon curd you'll ever make. It packs a tart lemony punch that's way better than store bought.

Cook Time 5 minutes

Ingredients
  

  • 1 cup granulated sugar
  • 3 large eggs, room temperature
  • 1 cup fresh lemon juice, (6-7 large lemons)
  • zest of 3 lemons
  • 1/2 cup unsalted butter, melted

Instructions
 

  • In a large microwave safe bowl, whisk the sugar and eggs until combined.
  • Whisk in the lemon juice, lemon zest, and melted butter.
  • Place the bowl in the microwave and cook on full power in 1 minute intervals. Stir well after each minute.
  • It should only take about 3-5 minutes for your curd to get to the right consistency. It should coat the back of your spatula or spoon. See the pictures above for reference.
  • To remove any lumps, you will need to push the lemon curd through a fine sieve. As you can see from the pictures above, I had a lot of lumps remaining in the sieve.
  • Pour or spoon the lemon curd into sterile jars and cool to room temperature. To sterilize my jars, I just put them into a pot of boiling water. I sterilize the lids as well.
  • The lemon curd will keep up to two weeks in the fridge.

Notes

  1. This makes enough lemon curd to fill 3 1/2 pint jars.  That’s about 3 cups of lemon curd.  
  2. I have not frozen this lemon curd, but you could.  I would suggest leaving enough room in your glass jars to allow room for expansion so the jars don’t crack.

    Finally tried the lemon blueberry muffins and they are delicious! Not too lemony nor too sweet, they weren’t very time-consuming to put together. I’ll make them again!
