I was craving chocolate cake yesterday but didn’t feel like going out to get any nor did I want a whole cake that I would have to eat myself. I’ve seen this recipe around and have been wanting to try it so this was the perfect opportunity. I had everything on hand and it was simple to put together.
I was ok, but nothing great. It’s good for when you are really craving chocolate cake but don’t have any other options. I found it chewy and lacking any realy chocolate flavor. I may try it again with some chocolate chips and see if that helps it but I’m not sure if it would make a big difference.
Fast and Easy Chocolate Cake
4 tablespoons AP or cake flour
4 tablespoons sugar (I used 3 tablespoons of vanilla sugar)
2 tablespoons cocoa powder
1 egg
1 egg
3 tablespoons milk (I used vanilla soy milk because that’s what I had)
3 tablespoons oil
Splash of vanilla extract (I forgot to add this)
In a large mug mix together the flour, sugar and cocoa powder. Add the remaining ingredients and mix well.
Cook for 3 minutes in the microwave. Invert the cake onto and plate and enjoy!

I haven't made this yet but am forever surprised when chocolate cakes don't call for at least a pinch of salt! I will definitely add a small pinch to mine! Also maybe a sprinkle of espresso powder to intensify the chocolate flavor. Thanks for the recipe! Can't wait to play!
