We have been making my Banana Oatmeal Pancakes most weekends but I wanted something a little different. Since we loved the flavors of the pancakes, I wanted to make them into waffles. That is how these Banana Oatmeal Waffles were born!
Are you a brunch person? We definitely are, we generally have either pancakes or waffles on the weekend. Usually served with some fresh fruit, eggs, and some type of breakfast meat such as homemade turkey sausage, ham, or occasionally bacon.

How I came up with Banana Oatmeal Waffles
I like my waffles to be crispy. I’m not a huge fan of waffles that get soggy quickly. No limp waffles here!
I ended up doing a little more research and found that most waffle recipes include butter. So the oil was replaced with butter. I also replaced some of the flour with cornstarch. You can check out the Pumpkin Waffle recipe to find out why!

If you don’t have cornstarch, you can just use all purpose flour. The waffles may not come out as crispy, but they will still taste delicious!
I also added some ground cinnamon to the waffles. Cinnamon seems to give things a comforting taste, or is that just me? Anyways, this is totally optional and you can leave it out if you’d like.
What to do with leftovers
If you happen to have leftovers, these waffle freeze really well. I like to let them cool, wrap in plastic wrap, and then place into a freezer bag. You can also freeze them on a sheet tray and then put into a freezer bag if you’d like.
When you need a quick and easy breakfast, just pull out a waffle from the freezer and pop it into the toaster. I know there are days when I just don’t feel like making something for breakfast, so these come in super handy.

Simple Banana Oatmeal Waffles
Ingredients
- 1 cup all purpose flour
- 1/4 cup corn starch
- 2 tsp baking powder
- 1/2 tsp ground cinnamon, optional
- 1/4 tsp kosher salt
- 2 medium ripe bananas mashed
- 1 1/2 cups almond milk or any kind of milk you’d like
- 1 cup old fashioned rolled oats
- 2 large eggs, at room temperature
- 2 tbsp unsalted butter, melted and cooled slightly
Instructions
- Preheat oven to 250°F and preheat your waffle iron.
- Place the butter in a small bowl and microwave in 15 second increments until the butter is melted. Set aside.
- In a large bowl, mix together the mashed bananas, almond milk, and oats. Let sit for 5 minutes.
- While the banana oat mixture is sitting, mix together the flour, baking powder, cinnamon (if using), and salt in a small bowl.
- Once the banana oat mixture is done soaking, add the eggs and melted butter. Mix to combine.
- Add the flour mixture to the wet ingredients and stir until just combined.
- Spray the waffle iron with cooking spray or brush with oil. Spoon 3/4 cup of the batter into the waffle iron and spread slightly. Cook according to the manufacturer's instructions.
- Transfer the waffles to a rack in the oven to keep warm and crispy. Make more waffles until you use up all of the batter.
Notes
- 3/4 cup of batter is perfect for my waffle iron, but this could vary depending on your waffle iron.
- I like to flip my waffles and cook them longer as I like crispier waffles.
- These waffles freeze well. I wrap them individually in plastic wrap and then place them into a freezer bag.
