Mini Strawberry Shortcake Trifles

These Mini Strawberry Shortcake Trifles were born out of wanting some dessert, using what I had, and a dessert I saw in Instagram. Do you ever have those times when you see a dessert somewhere and you have to have it right away? Well that’s what happened in this case.

My version is much simpler than the Strawberry Shortcake Trifle that How Sweet Eats posted. Her’s looked amazing but I wanted something a little easier. Some days you just want to have an easy dessert and not something that’s complicated. Plus, there’s just the two of us and we don’t need a whole trifle to ourselves. My mini version of a strawberry shortcake trifle is the perfect size for us!

The Mini Strawberry Shortcake Trifle Ingredients

This recipe is really simple and you can use what you have on hand. I had my Purple Sweet Potato Biscuits but you could use scones, pound cake, angel food cake, or regular biscuits.

I used whip topping as it’s the easiest, but you could use regular whipped cream, or canned whip cream. Use what you have! That’s the beauty of this recipe, nothing fancy is required.

Don’t have strawberries? This shortcake trifle would be great with raspberries, blueberries, blackberries, or a mix of berries!

Generally you would macerate berries for a shortcake but I chose to use my Strawberry Lemon Freezer Jam to coat the berries. I wanted a little sweetness and I think the hint of lemon went well in the trifle. You could use granulated sugar, a different type of jam, or just leave your strawberries plain. The choice is yours!

3. Get pretty dishes for your trifles
4. Add in half of your biscuit pieces divided between two dishes

5. Add half of the sliced strawberries, divided between the two dishes
6. Add half of the whipped topping, divided between the two dishes
7. Divide the remaining biscuit pieces between the two dishes
8. Divide the remaining sliced strawberries between the two dishes and top with remaining whipped topping

The Recipe

This recipe can easily be scaled depending on how many people you are serving. If you are making it for yourself, you can cut the recipe in half. If you have a large family, you could easily make 2-3 times the recipe.

I’m not sure you can even call this a recipe, it feels more like just throwing together what you have to make a simple dessert. No matter what you call it, it’s delicious and highlights great summer berries.

Also, can you tell that I am obsessed with these vintage depression glass dessert dishes? Aren’t they the cutest? I found them at a thrift store and I love them! Now I really want to go visit all of the thrift stores and see what treasures I can find. For now, online shopping will probably have to do.

Mini Strawberry Shortcake Trifles

This strawberry shortcake trifle is an easy and versatile dessert that can be customized to use what you have on hand.

Ingredients
  

  • 1 cup sliced strawberries, see notes
  • 1 tbsp strawberry lemon freezer jam, see notes
  • 1 cup whipped topping, see notes
  • 2 purple sweet potato biscuits, torn into pieces (approx. 1 heaping cup). See notes
  • 2 whole strawberries for topping, optional

Instructions
 

  • In a small bowl, combine your strawberries and jam. If you are using granulated sugar, let the berries sit for a few minutes before assembling your trifle so it has time to macerate.
  • In your serving dishes, divide half of the biscuit pieces into the bottom of the dish.
  • Divide half of your sliced strawberries between the two dishes and then divide half of your whipped topping between the two dishes.
  • Repeat the layers a second time, using the remaining biscuit pieces, sliced strawberries, and whipped topping.
  • Top with the whole strawberries if using.

Notes

  1. You can use any berries you have on hand, you can even use a mix of berries.
  2. You don’t have to use freezer jam, you can also use granulated sugar to taste, another type of jam, or leave the strawberries plain.
  3. Instead of whipped topping, you can use real whipped cream.
  4. If you don’t have biscuits, you can use scones, pound cake, or angel food cake.
