White Chocolate Macadamia Nut Blondies

Macadamia nuts have to be one of my favorite nuts. Something about eating them just reminds me of being back in Hawaii. Hawaii is one of my favorite places to visit and I can’t wait until we can go back……maybe one day! I have a stash of macadamia nuts from the last time we were in Hawaii that I’ve been wanting to use. These White Chocolate Macadamia Nut Blondies were calling my name!

I’ve made these Monster Macadamia Nut Blondies before, but this time I wanted to add white chocolate chips. These White Chocolate Macadamia Nut Blondies don’t disappoint. These are great for dessert with a cup of coffee or even for breakfast with your coffee. I may have done that once or twice, so I wouldn’t judge if you decided to do that as well.

My changes to the original recipe

I always reduce the sugar called for in a recipe. I don’t like things that are super sweet and I generally don’t miss the extra sugar. If you like things on the sweeter side, feel free to add 1/4-1/2 cup of extra brown sugar.

Like I mentioned earlier, I added white chocolate chips but you could easily use milk, semi-sweet, or dark chocolate chips instead. I don’t think that any of those substitutions could be bad!

Macadamia nuts are on the pricier side, so you could always substitute with another kind of nut. Walnuts or pecans would go really well in these blondies as well. Even chopped roasted almonds would work. If you don’t like nuts, then leave them out and add more chocolate chips.

White Chocolate Macadamia Nut Blondies

These White Chocolate Macadamia Nut Blondies are soft, chewy, and packed with macadamia nuts and white chocolate chips. They will become your new favorite blondie!

Ingredients
  

  • 2 1/2 cups all purpose flour
  • 2 tsp baking powder
  • 1/4 tsp kosher salt
  • 1 cup ( 2 sticks) unsalted butter, room temperature
  • 1 1/3 cups light brown sugar, packed
  • 2 large eggs, room temperature
  • 2 tsp vanilla extract
  • 1 cup chopped macadamia nuts, divided
  • 1/2 cup white chocolate chips, divided

Instructions
 

  • Preheat oven to 350°F and grease or line with parchment paper a 9×9 baking pan.
  • In a medium bowl, mix together the flour, baking powder, and salt.
  • In a large bowl or in a mixer, mix together the butter and brown sugar until light and creamy. Then add in the eggs and vanilla extract. Stir or beat until well combined.
  • Add in the flour mixture and just mix until combined, do not over mix your batter.
  • Reserve 1/4 cup of the macadamia nuts and 1/8 cup of the white chocolate chips to sprinkle on top of the blondies. Gently mix in the remaining macadamia nuts and white chocolate chips into the blondie batter.
  • Pour the batter into your prepared baking pan and spread out evenly. Topped with the reserved macadamia nuts and white chocolate chips.
  • Bake for 25-28 minutes or until a tooth pick comes out clean. If you want your blondies a little more gooey, take them out a little earlier than 25 minutes.

Notes

  1. These bars are not overly sweet as I cut down the sugar from the original recipe.  If you prefer your blondies to be a little sweeter, you can increase the sugar by 1/4-1/2 cup.
  2. You could substitute the while chocolate chips with milk, semi-sweet, or dark chocolate chips.
  3. If there are nuts that you like more than macadamia nuts, you could use those instead.  This would be amazing with some walnuts.
  4. These will keep well in an airtight container for a couple of days on your counter, or a week in the fridge.  If you want to keep them longer, I would recommend freezing any leftovers in a freezer bag.
