Mini Strawberry Shortcake Trifles

This strawberry shortcake trifle is an easy and versatile dessert that can be customized to use what you have on hand.

Ingredients
  

  • 1 cup sliced strawberries, see notes
  • 1 tbsp strawberry lemon freezer jam, see notes
  • 1 cup whipped topping, see notes
  • 2 purple sweet potato biscuits, torn into pieces (approx. 1 heaping cup). See notes
  • 2 whole strawberries for topping, optional

Instructions
 

  • In a small bowl, combine your strawberries and jam. If you are using granulated sugar, let the berries sit for a few minutes before assembling your trifle so it has time to macerate.
  • In your serving dishes, divide half of the biscuit pieces into the bottom of the dish.
  • Divide half of your sliced strawberries between the two dishes and then divide half of your whipped topping between the two dishes.
  • Repeat the layers a second time, using the remaining biscuit pieces, sliced strawberries, and whipped topping.
  • Top with the whole strawberries if using.

Notes

  1. You can use any berries you have on hand, you can even use a mix of berries.
  2. You don't have to use freezer jam, you can also use granulated sugar to taste, another type of jam, or leave the strawberries plain.
  3. Instead of whipped topping, you can use real whipped cream.
  4. If you don't have biscuits, you can use scones, pound cake, or angel food cake.
